Learn to Cook Country Rancho Style

San Miguel de Allende is full of amazing restaurants and cooking classes. But wouldn’t it be fun to learn traditional cooking from local indigenous women in a country setting?

Las Rancheritas of Agustín Gonzáles is offering just such an experience. The group is already known and loved for its Ranch Tour (rughookproject.com/the-rancho-tour). And now these talented women are offering cooking classes so you can learn how to make delicious traditional food from the experts.

The menu sounds simple, but when you are making tortillas starting from a cob of dried corn which you grind with a stone metate to make masa, it’s anything but easy. However, the women are there to help. Their easygoing manner and laughter make the class fun. One of the most enchanting processes is printing designs on the tortillas using an ancient technique using an herb colorant and a molde. There are few people in Mexico still doing this lovely tradition.

All food is prepared on a comal, which is like a big metal plate with a fire underneath. The reason everything is so tasty is that it is cooked on fire and is super fresh.

For salad, we will be making nopalitos. This delicious dish is made from the nopal cactus. It has a flavor resembling green beans but is much tastier and more nutritious. The main dish will be chiles rellenos stuffed with fresh homemade cheese and breaded with cornmeal. The entire meal is vegetarian and vegan since only corn flour is used.

Also included in the class will be the making of two kinds of salsa, potato patties, guacamole, beans, and fruit water. The women practice strict sanitary methods, so everything is purified.

You will enjoy a sumptuous feast and lots of laughs in a beautiful location, on a hillside overlooking the Presa Allende and San Miguel.
