Cerveceria Dos Aves Wins Gold for San Miguel

Among the many wonderful things that San Miguel is famous for, we can now include prizewinning artisanal beer, thanks to Cerveceria Dos Aves.

This November over 200 microbreweries participated in COPA, a yearly competition in CDMX sponsored by the craft brewers association ACERMEX and considered the Academy Awards of beer. Cerveceria Dos Aves won a gold medal for their Pale Ale for the second time, making it #1 in all of Mexico. They also received a silver medal for their Imperial IPA. In the past, they have also won gold medals for their Barley Wine and Russian Imperial Stout, and a bronze medal for their Belgian Tripel.

According to Mark Taylor, head brewer at Cerveceria Dos Aves, Pale Ale is considered the “holy grail” as a measure of quality for any brewery, and they are honored to have taken first place, competing against 50 other entries.

Six years ago, Mark moved to San Miguel from Santa Cruz, California, where he had been teaching home brewing at the local college. The first thing he did when he arrived was to buy a tamale pot at the Tuesday market, along with a burner and a few hoses and ingredients, and begin to brew his own beer in the tiny back patio of a rented apartment. He planned to start a small beer school to teach the interested residents of San Miguel how to brew their own beer. However, one of his students and fellow home brewer, Francisco Kameko, suggested they instead start a brewery together.

So in 2012, they rented a tiny one-car garage in Colonia San Antonio, had some equipment made by a local welder, and Cerveceria Dos Aves was born, becoming San Miguel’s first microbrewery. At that time, many new artisanal microbreweries were popping up in Mexico due to the new relaxed laws that allowed other breweries besides Modelo and Cauhtemóc to sell their beer in Mexico. Mark and Francisco began producing small batches of beer, which soon increased to larger batches and bigger equipment as the demand for good tasting craft beer grew.

Now, five years later, Dos Aves is operating out of a large warehouse on the outskirts of San Miguel with the capacity to produce 1,000 cases of beer a month. Their standard styles include Pale Ale, India Pale Ale (IPA), Imperial Stout, Belgian Tripel, and a special anniversary beer each year. Dos Aves is now being sold in many of San Miguel’s finer restaurants and shops and is distributed all over the country.

Asked what it takes to produce an award winning beer, Mark and Francisco both agree it is the commitment to using quality ingredients, a strong recipe, knowledge of brewing science, and the tenacity and diligence needed to brew a lot of beer.
