XIPAL

Casa Rosada is a Hotel Boutique located in the very heart of the city. Its building was a convent previously and then it was the Hospital de Naturales de la Purísima Concepción for years. The daughter of the illustrious painter Diego Rivera owned the building for some years and in 1997, it was acquired by its current owners who converted the place to a hotel. But two years ago, they decided to publicize the hotel restaurant more and present it to tourists and local people in a different way. Their idea is to appeal to familiar faces and neighbors who might like to have a “fresh” coffee and some chilaquiles in the morning. The gardens and the history of the building offer a harmonious atmosphere to diners. “There is a very old, pleasant courtyard with lots of plants and color,” said chef Daniel Salazar. Xipal promises to serve a good Mexican meal prepared by chef Salazar, who with his creative imagination transforms Mexican colors and flavors into a unique option for the people of San Miguel de Allende.

Daniel Salazar delighted us with an extensive list of dishes that he prepares for Xipal, but it was the recipe for the Black Chilaquiles that is our favorite to interest the readers of Atención.

 

Black chilaquiles

Ingredients: (for 4 portions)

3 pieces of ancho chile

3 pieces of pasilla chile

3 pieces of guajillo chile

1 garlic clove

Cumin and salt to taste

400g chicken

8 eggs

200 gm asadero cheese

2 cups sour cream.

2 liters chicken broth

300 gm corn tortilla

 

Directions:

Heat the chili and garlic. Add the chicken broth. Put all the ingredients in the blender.  Blend and add salt and cumin to taste. For totopos, cut the tortillas in 8 parts and fry them.

Put oil in a pan and add a few large pieces of onion. Heat the onion until it is caramelized and then remove it from the oil. Add the already liquefied sauce and cook  it a little. Add totopos. Serve with beans, grilled chicken, and eggs to taste, topped with cheese and the cream.
