For omnivorous people, vegan food is slightly intimidating. At the word “vegan,” the first thing many envision is a list of not very creative salads with lettuce combined with more vegetables. This Perfect Day exploration aims to break that paradigm. The products and vegan restaurants in San Miguel de Allende are illustrate that dishes without animal ingredients can not only be responsive to environmental or ethical dilemmas with the food industry with possible medical consequences—but also they can be quite palatable.
To start the day on the right foot, go to the traditional health food store, Genesis. There you’ll find varied juices that you can combine with spirulina. Their menu also includes Arabic pitas stuffed with lettuce, tomato, gomasio (condiment made of sesame seeds and sea salt), soy sauce, olive oil, and cheese (can be ordered without it).
If you like gourmet mushrooms, just call Simbiosis. This is a small business that sells these specialty mushrooms for culinary and medicinal purposes. The company proudly explains that their products contain all the essential amino acids, fiber, and vitamins; reduce cholesterol; and strengthen the immune system.
Then set off to Don Taco Tequila, where you’ll have spirulina and guacamole with a ceviche of mushrooms.

Another spot to visit is Los Burritos on Hidalgo. Though it is not a vegan or vegetarian place, you can choose different meat free and dairy options, such as potatoes with green sauce. Everything is cooked with vegetable oil.
