Santiago, Matteo, and Áperi Combine to Benefit the SPA

Years ago, a recently widowed woman, came to the SPA with her three young sons in tow, all under eight years old. Hearing that they wanted to see the cats, our cat advocate (Joan) was concerned about their ages. No fear, they were nothing but gentle, and they have been welcomed back over the years, bringing in small gifts for the cat ladies and behaving beautifully. They adopted a couple of kittens from us, and their mother even fostered a pair of 10-day-old kittens for us. She has donated her hand-woven bracelets and attended some of our fundraisers. Her support of the SPA has obviously transferred to her boys, one of whom is Santiago Aleck Pirsch, whose passion has now turned to cooking.

A few weeks ago, Santiago met chef Matteo Salas at Sabores San Miguel. After meeting him, Matteo decided the two of them would make a tasting menu of Matteo’s creation in his unique restaurant, Áperi, Quebrada 101. The Latin for “open” perfectly describes the Áperi’s vision and concept, featuring a unique culinary experience: food for the senses, prepared with the region’s freshest ingredients and the passion that characterizes its chef, Matteo Salas. When Matteo asked Santiago to be a guest chef and name which association he would like to benefit from the proceeds of the evening, Santiago chose the SPA!
Join us, Santiago, and Matteo on Thursday, July 16, at 6:30 pm for a five-course tasting menu, as follows: Amuse Bouche: sweet corn and burrata; First Course: sea bass ceviche with quinoa, watermelon, jicama, and cucumber; Second Course: braised short rib with wine sauce, crispy polenta, and roasted cabbage; Third Course: yogurt and almond foam, tapioca with almond extract, lichis, granita, and cranberry gel; Fourth Course: reconstructed lemon tart.
