A Very Mexican Day

Since we are celebrating the Fiestas Patrias in September, we can start with a breakfast at Via Organica, a Mexican restaurant with fresh, organic ingredients. We recommend the poached eggs that come on a bed of spinach and mushrooms with a salsa of spinach made with olive oil, salt, and pepper, or eggs “al albañil,” scrambled with onions and nopales and served with guajillo chile sauce with garnish of potatoes and salad. To drink, ask for Jamaica with ginger.

Here, at Vía Orgánica, you can ask for a tour on horseback. You are going to start with a short walk around the Vía Orgánica Eco-Ranch farm . Then, take a horseback ride through the countryside and the mountains of Los Picachos. After an hour and a half trip, you’ll enjoy a gourmet Mexican meal at a local farm. Here, you will also learn how pulque is produced. This is a fermented traditional drink from the maguey, a native Mexican plant. When you have finished, they will drive you back to Vía Orgánica Eco-Ranch.

We recommend that you ask for the latest mezcal margaritas, and for dinner, a tuna tartar with habanero chili, lemon, and olives.
