Chef Manolo Cafe Santa Ana

With the recent remodeling of Cafe Santa Ana, new specialty dishes have been added to the menu. One of the most requested is chicken brochette in peanut sauce. Chef Manolo Leal, who has worked there for eight years, shared his recipe with us.

Sauce preparation:

Brown the peanuts with onion and garlic, add chiles, and cook until everything is blended, mix in a blender.

Chicken preparation:

Mix the cabbage, onion, and carrot add mayonnaise and sugar in the measurements mentioned above. When this mixture is ready, place it on a plate as a base for the brochette. Afterwards cut the chicken breast into four parts and place them on the grill. Add salt, pepper, and Maggi sauce. Meanwhile, fry the peanut sauce in a frying pan. When chicken breasts are ready, fold each piece, and insert a wood skewer into one. Then add the peanut sauce. Finally, put the chicken in sauce on top of the salad.

Chicken Brochette in Peanut Sauce

½ cup of white cabbage
¼ cup onion
½ cup of grated carrot
One tablespoon of mayonnaise
Pinch of sugar
A chicken breast
Pinch of salt
black pepper
Maggi sauce
Four wooden skewers
Peanut Sauce:
1 ¼  cups peanuts
¼ chili diced for cooking
Two cloves of garlic
50 grams of onion
