En la Cocina … Grandpa & Son Burgers

Burgers have long been a favorite comfort food and a quick, easy meal. But, who said a burger can’t be elegant as well? At El Grandpa & Son (which phonetically sounds like el gran panzón—the big fat man—in Spanish,) some delicious gourmet burgers are created using sophisticated ingredients and twists on classic recipes. You can take your pick from a large variety of options: meat, fish, shrimp or vegetarian. They also have a kids’ menu for the little ones.

The following recipe, shared by Felipe Vértiz, owner of the restaurant, is a vegetarian burger with Mediterranean touches. It is light and savory, perfect for a summertime lunch.

¼ cup goat cheese
2 tablespoons flour
1 cup breadcrumbs
1 egg
¼ cup sliced mushrooms
1 tablespoon chopped onion
1 pinch finely chopped garlic
1 pinch chopped parsley
3 sun-dried tomatoes
1 bunch of arugula
1 bun
Salt and pepper

Sauté the mushrooms with a little oil, along with garlic, onion, parsley and salt and pepper to taste. Mold the cheese into a burger-shaped disc and coat it with flour, then egg, and finally the breadcrumbs. In a hot, oiled pan fry the goat cheese burger on both sides until brown. Put the burger together first by placing arugula on the bun, then the breaded goat cheese, then the mushrooms, and top it with the sun-dried tomatoes. Serve it with French fries as a side dish.
