In the kitchen with … Fidel López Landeros

Chef Fidel López Landeros, originally from the Chichimequias municipality of Silao, Guanajuato, started from the bottom in 1991 and now has been the chef at Los Milagros restaurant for about six years. The restaurant is located at Relox 17 (hours: Mon & Wed, 12pm–11pm; Fri & Sat, 12pm–1am; Sun, 12pm–9pm). For him, Mexican food is one of the richest cuisines in terms of variety and ingredients, and that is why it is his favorite food to cook.

One dish that distinguishes Los Milagros restaurant is the molcajete, a succulent mix of ingredients served in a traditional mortar of volcanic stone. Below is a recipe for one of Los Milagros’ most popular dishes, Molcajete de Arrachera.

• 250 gms of arrachera
• Cooked green salsa
• Grilled green salsa
• 4 pcs of nopales
• 4 pcs of grilled spring onions
• Güero chile
• 100 gms of grilled panela cheese
• Chopped onion and cilantro
• Molcajete

1. Warm the molcajete for 20 minutes in the oven
2. Roast the arrachera
3. Cut it into thin strips
4. Put the nopales into the molcajete
5. Put the arrachera strips on the nopales
6. Once the molcajete is warm put the salsas inside
7. Put the rest of the ingredients in the molcajete
8. Serve with refried beans, guacamole and tortillas

Something that makes Los Milagros restaurant stand out from others is the attention to detail during preparation and service of the food.

Their menu includes Mexican and international dishes, including an offering called “Surtido Milagros” (Milagros Mixture), which includes sopes, carnitas, duritos and other Mexican favorites. Beside colourful decorations and walls decorated with milagros, the restaurant offers live music on Fridays and Saturdays by the group Los Peques from 10pm to 12am, and on Saturdays and Sundays from 3 to 5pm guitarists Jack & Frances entertain guests.
