Amaranth was a key political, economic, social and religious component to Mexican peoples. Unfortunately, it was banned under penalty of death by the early conquistadores who undermined the entire diet of many indigenous people. Today, amaranth is known around the globe as being highly nutritious.

Kirsten West is an international chef and cooking instructor. She has spent more than 25 years studying the diverse cuisine of this country, working with other well-known cooking personalities such as Diana Kennedy and Rick Bayless.
